But the hardest boss for me is always Champion Gundyr, because I never learned how to parry.

Nothing got me out of the game but I tried Soul of Cinder so many times I can't count. One friend came to my house and watched me die on 1 hit, then he told me to fucking relocate my stats because I shitted it up.
In Bloodborne one chalice boss made me crazy until I figured out they weren't part of the main story. I can't remember the name but was one of those giants with a claw in its arm.
In Demon's Souls I was terrified with every boss but somehow I finished the game. That may be the reason I never gave up with the rest

This. I look at videos of people fighting him and he uses arrows maybe once. I fight him and he does literally nothing but arrows and orb spam.

I've seen many people complain about it but it was never that hard for me, even if every boss cost me at leas 5 tries

In DS3, it's been Midir > Soul of Cinder > Friede as far as filter bosses go. None of them even feel that difficult, they just tend ot be frustrating.

Manus took me a week to fight in my first playthrough of Dark Souls. Definitely a filter, even at high levels.

You just have to learn spacing and parrying in the first phase. He's not too tough by the end of the game, but he's definitely no pushover (especially compared to prior bosses).
I'd call him the second serious boss after Abyss Watchers for new players.

Pontiff is the only boss in DS3 I have to use a shield for. It makes the boss 1000x easier.
