Sekiro is one of the best designed games ever made. You can tell so much work went into every single aspect of that game.
Bloodborne is similar to Sekiro in terms of it being brilliantly designed, but there are a few areas I don't like, like having to do one of those bullshit falling platforming sections to find the secret Hunter's Dream.
Sekiro > Bloodborne > Dark Souls > Dark Souls 3 > Demon's Souls > Dark Souls 2

Am I the only one who thinks stealth works well in Sekiro? I like it when I see two dudes but can use a stealth kill to only have to fight one. It's tedious when you're trying to take out everyone with stealth but I don't think that was the point. There are also cool tricks like using blood smoke on a weak mook so you can avoid a 2v1 against the second Juzou and second spear midboss.

I don't see the point of the health-bar if you have posture and vice versa. Plus, I can barely think of times I used one of my arm gadgets. The music isn't very memorable, some of the bosses are shit, and the story wasn't really all that special. Also I think constantly hitting the riposte button is stupid and the fact you need pink confetti just to properly fight some bosses is bullshit.

The combat is nothing like the Souls games, and most bosses actively punish you for trying to fight them like Souls bosses, so people who are good at the Souls games get frustrated.

Posture is basically just a better implemented stamina meter and the arm gadgets have plenty of use (like the fire cracker against the ape or the axe against those shield midgets). You are right about the music but across the entire souls series I can only remember like 3 tracks anyway.
