It's funny how people hate on FO3 then put FO2 and especially NV on a pedestal. FO2 shat on FO1 all over the place and NV is less strictly adherent to canon than FO3 is.
FO2 was a downgrade from FO1 in every way except party management and the Highwayman. Writing and story was trash and full of memes and bullshit, any canon and lore they tried to establish in FO1 got chucked out the door. Sure FO2 had much more content and is more replayable because of it, but the quality is all over the place, along with the plot and gameplay flow.
The argument that people hate something because e-celebs is bullshit too. Also FO3 does have flaws outside of the story; story is actually decent in FO3 except being a rehash of FO1, but considering it was an IP reboot in a different game format, it was a smart play. Gameplay had issues: skill points are OP as shit compared to attributes (which sucks because SPECIAL is one of the best game attribute systems ever designed), and random encounters, while functioning well, are somewhat bugged in FO3 so once one type triggers at a location that same one always does (and that deja vu limits the almost unlimited replay value of the Capital Wasteland).

NV was also unplayable out of the box. Trash location continuity, any gameplay upgrades Obsidian did make, like Reputation, were straight up broken. FO3, besides G4WL being trash (completely independent of the game itself), was perfectly playable out of the box. I couldn't play through NV a single time without atleast YUP.

In my eyes Bethesda always makes interesting environments that actually make you want to explore everything. I did like the atmosphere apart from the green filter thing.
I wish there was a fallout game where bethesda did nothing but design the environments, and a group like new vegas' writers took care of all the dialogue and quests
