Sigma has extra content. There is also a Sigma 2 Plus version on the Vita that has even more content then the PS3 version but it runs at sub 30FPS.

Only Ninja Giaden 1 and 2 got a Sigma version. Ninja Gaiden 3 has the launch vanilla version and Razor's Edge version with more content.
