DS2 and DS3 vastly improved everything about DS1 besides the interconnected world design.

Insane levels of DS1 passive poise broke the game in both PvE and PvP, it was a mechanic to allow slow weapons to trade with fast ones without getting stunlocking, not to be a permanent iron flesh buff that lets you shit on everything. If you want this kind of easymode shit, use cheat engine.

Backstabs not being instant and removing infinite stunlocks is the reason these games triumphed over DS1.

There was a way to fix it without removing it, and using extreme examples of people minmaxing to "win" doesn't help your point. Considering he never went under 50% HP, you can pull that off at even SL30 or slightly lower but your heals have to be timed well.
You can wear Havel's regardless of level and he's fatrolling so he doesn't care about weight as long as it's not over 100 to slowwalk.
So you can probably pull it off as any base class with just meeting the min requirements to 2H the BKH, 20/18 STR/DEX and maybe a few levels into HP.
And he didn't have the 99 soft humanity crutch either, that gives an extra 99 phys def, as much as an extra Havel's chest.

Stone Armor in the forest has nearly as much poise as phys resistance as Smouth and you can get it before beating any boss.

Poise damage is the whole point.

The only bullshit boss fight is Demon of Hatred, and that's because it punishes you for parrying of attacking poise like you've been conditioned to do by every other boss.

Health exists so that the poise of hit-and-run enemies like Guardian Ape can be worn down. You missed the point of poise entirely if you're annoyed that enemies recover it quickly; the system (and the efficacy of parrying) incentives the player to keep pressuring enemies, since they cannot recover while they're attacking or being attacked. Also, the game hands the player one huge advantage concerning poise: if you are timing your parries correctly (not mashing), your poise will never break, even when the gauge maxes out.
