its really fun playing with equally skilled opponents. But thats for every pvp game.
At first, fun to be able to defeat opponent despite not knowing the meta moves and combos
But once you want to actually learn the combos it gets way fun to a point. When you Duke it out with autists who actually play a shit ton of hours to learn match-ups and frame data it kind of gets too burdensome.

You have to work for spectacle in Sonic games too. The classic and boost games constantly throw things that you have to react to quickly. Keeping your speed is the reward for playing well.

None. It's an obsolete game-type similar to RTS. Only reason it existed was the arcade era. The only reason it continues to exist is people can't let go.
It can depend on the kind of fighting game, but I will try and keep it to general stuff.
- As a competitive game, it is a pure spectacle of who is the better player, no one to blame but yourself.
- Learning new things in training mode.
- Doing said new things in an actual match
- Doing said new things consistently across multiple matches, seeing how much you have improved.
- Expressing yourself through your character/team, this would usually be your playstyle with the character or some disgusting setplay in a game like Marvel vs Capcom 3.
Those are the main things that spring to mind, I think a lot of the appeal overlaps with rhythm games but instead of songs, it's human opponents, as time goes on you get better if you put in the work.
