I think most people buy PC's and then use them for 6-7 years, I'm reaching that end point for myself and I wanna get a "future proof" PC, what CPU and GPU do I need? Those are the only real important parts other than RAM anyway, right?

I was brand loyal to ATI growing up I meant, then I realized how shitty their support is and how inferior their control panel is compared to nvidia. The last time I heard about AMD cpus was when the ryzen was brand new and functioning very poorly.

if you don't care about 4k, dlss and RTX, yeah, 1070 should last you another generation as both DLSS and RTX continue to mature and get widespread use.

the only parts than can be somewhat future proof are the peripherals like case, fans and cpu cooling and of the actual main components, if you go with a 1200 W PSU with 10 year warranty youll be set for a very long time.

A 1070ti isn't future proof unless you just turn down the settings until eventually it doesn't run on low. Heck I'm pretty sure it has very poor fps on cyberpunk even at 1080p but that might just be the game optimization. AMD cpus are very good this gen and their price to performance is better than intel right now.

Pretty good, never replace your CPU more often than your GPU. That one barely bottlenecks the current high end cards.

or go for a ryzen under that especially if you game on higher resolutions which you should be with a 3080

ddr5 ram is likely rolling out next year.
Intel wont having anything new on the cpu front until 2022.
Ryzne 6000 is likely the last line of cpus that will work on the AM4 platform, and their performance is so much better than everything else that intel is no longer a good option.
Also in a weird spot with new GPUs as their performance is much greater now, but largely aimed at 4k displays.
AMD gpus do well without raytracing, but Nvida has DLSS, and only the very high end of Nvidias 3000 series does raytracing decently. Will likely be 1 more generation before both amd and nvidia before these new features shakeout.
