You have to tap them both, then let go of the button opposite the way you want to turn.
When 200km above your top speed, when not boosting, let go of A and you'll lose speed slower. Compare holding A after leveling out after the Aero Dive jump to leveling out and letting go of A when you land. This is more effective the heavier your machine.
