a lot.
start with 1, 3 and rondo for classicvanias and sotn, aria and any (or all) of the ds games for metroidvanias.
not familiar with the 3D games though.
pretty much every 2d castlevania except 2 is worth playing .
imo castlevania 3 was the peak of the series - the earlier titles that were more of the arcadey style rather than the castlevania genre had the best gameplay. second place goes to rondo of blood which you can easily find a PC port for it on jewtube.
4, rondo, bloodlines, and symphony

it's weird, questionable and horribly localized. just leave it for later, don't think about it for now, play the unquestionable good ones first.
It would be easier to list the ones not worth playing. Most of them are great and some, like OP's post, are genuine masterpieces.
I have played and beaten that game like 8 times.
It's really unpolished and they tried a new formula instead of improving the already working one.
Also AVGN's review made people hate it with passion.

Adventure is surprisingly decent with the patch to make Belmont walk faster. I'd recommend it with that. Legends has similar but there's nothing saving it's level design.
And as much as people try to fuck with Simon's Quest there's just so much bullshit it's hardly worth it if you're not already a superfan.
There is a 'remaster' out there made by one fan called Simon's Quest Rebitten, it's probably the 'best' version of SQ to play at this point but there's so many caveats, the leading one being you have to pay the dude 20 dollars to play it lol.
Bloodstained is good STOP being a faggot anytime.

For the 3D games it's hard to give a recommendation since preferences seem to swing wildly. But they're pretty easily ignorable and generally not especially well-liked.
