I half-assed 8 years of piano lessons (which I now regret half-assing) so I wasn't a total music noob, but I didn't truly learn an instrument until I took a guitar class for an easy gen-ed in my sophomore year of college. Almost 5 years in and I'd consider myself a perfectly competent guitarist.

I don't really understand this line of thinking, there will always be people better than you and others in any field. That doesn't mean you can't or shouldn't do what you want to, it's not a competition, well it shouldn't be anyway

Yes because it's totally worth it and completely practical to spend a bare minimum of 2-3 hours a day playing an instrument for 4-5 years just so you can attain the level of proficiency of a typical 16 year old with classical training when you are in your mid 20s.

Get a good teacher and put the hours.

That's cool for me. The thing that hinders adults from learning is that they usually try to catch up and then get demotivated.

Just enjoy the ride. If you want to play a new instrument, do it. Learning and applying techniques is fun.

That's a stupid way to look at anything. You learn things so you can accomplish some task. It's a means to an end not an end in itself. That's what hinders most adults from learning. That it's pointless to devote copious amounts of your limited time to something that will not allow you to accomplish anything.
