Because that is the normalfag ship. When I first watched Avatar ages ago I thought it is just natural that will be the endgame. There aren't many important single characters in the show. I don't remember exact scenes that much, but they shared one in the cave and honestly the final battle is pretty important. Zuko faces his greatest challenge with Katara. Not Mei, not with someone else but Katara (he even sacrifices himself for her). The entire thing with Aang is weird, call me old school but Aang is younger, shorter, kiddy and he is the hero who is too busy with saving the world.
