I kind of feel like thinking Brian was ruined suggests that mayb he was your POV character when they portrayed him as the smartest and most mature character on the series, but now you're mad that they're taking the piss on your self-insert.
I might be way off base though so don't mind me being an armchair psychologist.

He was regularly seen reading the Bible in the pre-cancellation seasons and was even the one who told Peter that God was pissed at him when Peter started that cult.
The writers intentionally ruined Brian in order to give Stewie more depth and personality since he was just a one-note evil genius during the earlier seasons.
During the earlier seasons, Brian was best friends with Peter where he was the voice of reason to him and was more caring, snarky and intelligent.

However, they then paired him up with Stewie where they had changed him to a moronic horn dog who is full of himself and pretends to be smart in order for Stewie to be the more likable and reasonable of the two and flesh him out.

Adam West was the best Family Guy character.
That only happened during post-cancelletion, there was a pre-cancellation episode where Brian was in love with Lois and took therapy in order for him to get it fixed, culminating with Lois and him having a talk about it where Brian is able to get it out and Lois can let him down easy and Peter is none the wiser.
They completely threw that out of the window when it got revived, as Brian still has a crush on Lois.
That actually makes quite a bit of sense.

Some newer episodes seem to still address that idea that Flanders is better than Homer in every way. It feels like the “Flanderization” term got to the writers more than them genuinely reflecting on their own writing though

Haven't watched the simpsons for a very long time, but I remember that even when he got more fundamentalist, he still seemed like the idealised version

Newer Brian is better because they give him flaws to work with. Before when he was just the voice of reason he was pretty passive, but when they made him a hypocrite it opened up new storylines and interactions like
Yeah Brian and Quagmire both want to fuck Louis, but Brian makes it out to be tragic or romantic in his head. Quagmire is comfortable with himself and doesn't need to delude himself.
Giving flaws to otherwise competent characters is a big reason American Dad is better than Family Guy. It gives plausibility to how they end up in the situation (competency) and a reason to why it becomes a mess (flaws/neuroticism)

You can still be someone's friend and crush on their wife. Besides, like others have said, that only got really shitty after the change. They had one solid focus that resolved it before the change and it was heartfelt about it. Brian had a lot going on with Peter, they did an episode about it when everyone was treating him like a dog and not a person, they're good friends beyond owner and pet. All that has disappeared.
