It didn't effect the outcome of the story, it was just a personal thing. I don't think any character development came from it, atleast none that I think of. It was just Zuko getting a confidence boost, but it's not like he grew as a character as a result of it.
I guess we can chalk it up as Zuko bonding some more with Iroh, but that wasn't a result of Zuko winning the fight. Not a direct one, anyway.

Also, I forgot, but Iroh himself was not banned until Book 2 started, right? He only followed Zuko around to help him out of his own volition.

Iroh wasn't banned in Book 1, he just cared enough to be Zuko's guardian.

Its seems your trying to express your dislike for him due to being one of those characters who are created to be genius tier demi God pretty boys who are hyped by characters as a unstoppable force.....and then they job or fail to take on the threat or other top tiers in order to make the tension bigger or the main lead look cooler.
