There's kind of a weird question in this case, since while there was definitely a Western fandom this was so driven by the Asian Westaboo fandom. tumblr was so dominated by first Pinecest and then Billdip.
I think both characters were very popular in Asia, Mabel is a genki character, and Bill is seen as similar to a Shinto baku dream demon, plus the sort of Pokemon look for a Sanrio kind of mascot. Of course there's also the demon things which the japanese love, but you will notice a lot of cutesy art of this where Bill is actually just a triangle. They do use the bishounen gijinka too of course, but some of the artists for MaBill really liked the cute triangle Bill.
And then they could throw in Bipper and have some incest, but maybe not too much incest, there was 18+ doujinshi and stuff for that.
So in this case the art was very high quality and you had more of Western fandom taking Eastern fandom's lead than usual although I'm sure just putting a protagonist girl with a bad guy would have happened once the Onceler-ish gijinka of Bill predictably showed up, anyway.
I guess they're also both wacky and chaotic though, too. I remember talking to Japanese fans, some said it was because the two would get along, they had similar personalities, another said the Bubble Bill put Mabel in at the end was quote, "like the evil wizard trapping the Princess in a tower." Mabel was very popular in Japan, but there were no good boys to put her with. Mabifica (Mabel/Pacifica) also happened in Japan though, but for people not big on yuri, or who liked it but wanted a pair ship for their Dipper/Pacifica shipping so that wouldn't work, or who just shipped Mabel with a bunch of characters, they came up with this.
Probably a longer answer than you wanted but Gravity Falls fandoms were interesting in how odd they were so just watching it was interesting.

Yes, there was a lot of art and Japanese fanfic and things with the Dream Bubble for mabill, I noticed.
It's always also important to note that Japanese fandom doesn't really care what is "canon" or "intended by the creators" at all, so if they want to put together two fun characters although it's ridiculous, they just will, it doesn't need to make sense in the show, haha. Although I'd go so far as to argue that the character that it makes the most sense to put Bill with, maybe even moreso than Ford, might be Mabel. There was a book where he said he genuinely liked her, whereas for everyone else, saying nice things or being friendly just seemed to be to manipulate people for evil plans. Of course he was going to kill all of them so all of it is more than a bit silly and takes being willing to just shrug and ignore those things, but I like those shipping fandoms, they're not so serious. They are more fun and what ifs.
