We had a small tex-mex store where I use to live ran by an American couple. It was unironically the best food I have ever purchased from a business.
I can't speak for authentic Mexican food but to say tex-mex is shit is wrong and cope. I fail to see how extra E-coli with my burrito enhances the flavour. Marinated meat and beans with fresh produce is not rocket science.
