Provolone or a simple goat cheese or cream cheese. I appreciate fancier cheeses, but I enjoy the basics the most.

I am a simple man, with simple taste. I like how cheddar melt over the bread.

Gouda

Jarlsberg. It melts so good.

Extra sharp cheddar. Though I also love Gorgonzola, Blue cheese and Feta.

I love provolone and gorgonzola but I'm lactose intolerant so no cheese for me.

What a difficult choice... there are many cheeses I like, each one with its background
Here in Mexico my favourite ones are mennonite cheese and Oaxaca, both of them to be eaten in a flour tortilla with meat
Aside, I'm a huge fan of smoked cheeses, especially Idiazabal in Spain. But I also love Camembert, Brie, Reblochon, Maroilles (despite its smell) and Comte in France, Italian parmesan and pecorino and the British Blue stilton, which comes in a ceramic pot, it's a creamy blue cheese which I personally love.

What type of cheese do you use in tacos

Cheddar, manchego, brie, gouda, blue cheese, cottage cheese and "queso del pais" which is cottage cheese but less crumbly and more blocky.
