For plebs, their family crests comes from their family shop logo from medieval times. For nobles it often indicates family roots. For example a cadet branch of a noble family will have similar design
I believe the European coat of arms differs from individual to individual and there is no single "family crest" for a house.

Common folk that actually have them are just the descendants of nobility that have lost their status, or larping people who made it up or got sold one
