For plebs, their family crests comes from their family shop logo from medieval times. For nobles it often indicates family roots. For example a cadet branch of a noble family will have similar design

I believe the European coat of arms differs from individual to individual and there is no single "family crest" for a house.

I once in a while rarely see people in malls selling family crests, claiming they will find yours if you tell them about your past but it seems to be bullshit scams
Most families don't have one, its mostly for nobility and royals
Common folk that actually have them are just the descendants of nobility that have lost their status, or larping people who made it up or got sold one
