If you just dropped the last vowel in adjectives to make them genderless then it would sound horribly unnatural and far from Spanish. Considering other cases, not just latino/latina/latinx/latin (if your question was exclusively about that word then don't waste your time reading this):

That's why the proposal for genderless adjectives is either replacing a/o with an x (written) or with an e (spoken). It doesn't sound bad with the e but it's considered radfem/lgbt+ weirdo stuff and a lot of people look down on it, including me
This proposal exists for 2 different reasons: -When referring to a group of people, if there's AT LEAST 1 male in the group, any adjective referring to said group must be masculine. Supposedly implying 1 man is more important than any amount of women. -Gordo/Gorda implies the existence of only 2 genders. So the alphabet people seethe at it and ask for a neutral adjective
