As far as I can tell from googling it, "grisaia(グリザイア)" is a coined word that originates from a French word "grisaille(グリザイユ). "gris" from "grisaille" means grey in French and "grisaille" itself means a painting executed in shades of grey. On a side note, I'm not acquainted with French, so sorry if I'm mistaken.
