Even if we perpetuate the meme of Poland being Central Europe it's still wrong.
Belarus, Ukraine and all of the Baltic states are quintessentially Eastern Europe (they were all former USSR after all) and the percentage for these countries is lowe than the vast majority of Western Europe ie. Norway, Britain, Switzerland, Italy, Austria or Portugal.

My personal favorite is pickled cauliflower. Either in regular brine or with beet juice.
