Western Romance languages don't allow initial clusters like /sp st sk/, so they end with an epenthetic /e/. That's the case with Scotia -> Escócia.

My pronunciation does remove it but I do remove vowels quite a bit.

And then French removed the "s" in the consonant cluster. Therefore Scotland in French becomes "Écosse" and Latin "scrībere" became "écrire".
