Not him but a lot of troops, buddies with Castile, perfect position (especially for colonisation)...that's a pretty great country to play as.
I don't think so. I wanna say I was using Riga to help me dismantle the HRE. I managed it just before the end of the game.
France is easy mode
I unironically like playing Poland in strategy games. It's usually strong enough to be able to conquer a lot, without being too easy, and it's placed in such a position, that it's got a lot of viable expansion routes. It's got contact with both protestantism, orthodoxy and islam if Ottomans are close at the time. Also in EU4 you've got the option to get personal union early, form commonwealth later, and it's also got a unique form of government, so it's just more interesting than many other european picks.

Yes, it's a very strong country, but countries like England and France are often your rivals...not a good thing. With Portugal, you're comfy, you can invade Africa and become strong pretty quickly...I suppose. Hell, I'll soon start a Portugal game to see if it's the case!
In Europe try Trebizond or Theodoro. It's fun playing in the shadow of the Ottomans and these nations aren't quite as frustrating as say Byzantium.
In Asia the Burma region has a lot of nations with fun achievements (Kale, Manipur, Tauga(sp?))
Delhi or Bahmanis are stupidly OP. You can basically ignore religious unity for the whole game.

Aragon can be fun if you're planning to do a trade game, as they're pretty big in the Genoa trade node. You'll be pinched in between Castille and France though.

Pro-tip: Conquering Scotland is a great way to control the north-sea trade.
