American black bear, those dumb fucker are dumb as fuck, but god it taste so good.
My mother in law killed one this spring, sadly the fur was not worth keeping.
Met a few while walking in the wood, it's actually not the worse thing to encounter since they are afraid of us, wild cat are the real danger imo

Can't hardly describe it, it have a strong taste like every game but it depend if you killed it during spring or fall. Spring bear will have a lean meat while during fall the meat will be a lot more fatty.
For how to cook it, it depend on the cut, but the best way to try it is to make burger with it. Also remember it depend on the season you killed it. Fatty bear will benefit from a long and sloe cooking while lean meat will be grilled
