Pretty much everything, but the main reason is immersion which is made up of multiple parts but is greater than their sum.
It makes you forget that you are playing a video game, you are completely absorbed in the setting, world, story etc etc
Only after killing all the dreamers and whole White Palace business did that notion of playing a video game come back to me, before that I was the hollow knight, I was exploring that dead kingdom and that world and not many games have made me feel that way especially as I have grown older.
Aesthetics, and nothing else.

When did games start doing this? Just tell your story straight and for the love of god leave out “muh dreams and eldritch beings ahhhhhhhh” unless they’re the focus of the game

It's a trope trying to emulate the feel the creators had when they were kids and played videogames. The lore in all of the games sans RPGs and maybe even then was scarce, leading to your imagination filling the gaps. That is what this type of storytelling is trying to do. At least that's my take.
Since games have been around. Most old games only had stories that you could infer from the most basic of concepts.
What does it matter how they tell the story? If you don't care then you'll literally almost never here from it
I like deepest lore because it helps with the immersion and cuts out cringy dialogue and stupid story.
I’m fine with games that do that, but take Hollow Knight for example, it doesn’t just immerse you with metroid style hints, it shoves poems and cryptic dialogue down your throat:

Great artstyle, music and exploration. The combat was too simple for my taste, especially early on. The dash should've been avaliable from the start, as it would've made the forgotten crossroads way less boring.

It's an obvious nod to the player, making a note that the tablet is not a part of the game world and is in fact a tutorial.
After you find out the knight is royalty, the same words mean a different thing and the mechanics tutorial explains are recast as innate powers of the knight as quite literally a higher being.
It's one of the most brilliant world building moments in the game and you're a complete retard pretending it's "deep" so you can shit on it.

Alright so let me get this straight, the tablet is referring to you the knight, the HIGHER BEING. So who made this tablet?
99% of the vessels died and out of the few that live one is already fulfilling the purpose that the Pale King created them to do (contain the infection).
So the tablet had to be made by someone who knew the “knight” (it’s vessel btw, you’re not the hollow knight) was going to come back from the howling cliffs. Who knew this was going to happen?
It makes no sense.
-> It doesn’t function as ingame lore because it would make no sense for anyone in-game to make it. So it literally just functions as a tutorial, and once you realize that you realize the devs artificially made the tutorial littered with cool sounding stuff to appear deep.
