No More Heroes 1&2 don't really excel at regular combat, it's mostly just cool for the moves Travis does and how the motion control worked pretty well with them. The appeal is the characters, boss fights, and music. I hear Travis Strikes Again has better regular combat though, but you basically need to be a big Sudahead to understand half the cutscenes and references.
I hope NMH3 has some cool combat outside of just the bosses.

Low budget doesn't mean it's indie though, it just means it's low budget. It still had ~50 people working on it before you even get to voice acting and localization and qa testing.
I do wonder if it was rushed. There was a lack of polish, especially with the draw distance and colission detection
I liked it better than the second game.
It was moved up to cover for Brawl's delay, but I think it was only by a month or so which wouldn't have been a sufficient enough amount of time to polish it that much more. It did start off as an Xbox 360 game, but the change to Wii happened pretty early into the development and planning.

I was honestly upset when he canned the overworld in 2. I know it was empty and all around pointless, but I had fun cruising around on the schpieltiger. NMH3 is an automatic 9 for me if he let's me cruise around on the bike again.

No, NMH1 launched earlier in every region. Brawl came out in January in Japan, but didn't hit NA until March and PAL until June or July. NMH1 came out in December in Japan and then Jan in NA.
The overworld was planned for 2, but had to be cut late into development due to budget issues.
III is going to have the mech suit, but I'd be surprised if they didn't include the bike, especially since it has a new design.
