What's the appeal? i'll keep playing, I just want to know what I'm in for and why this is supposed to be good as it's not clicking yet.

It's deep alright. Everything about is well done down to the substories. The start is slow to build up the story and is worth staying through.

That right there. It's the modern Shenmue or Kunio-kun game. The games are kind of badly paced though. Sometimes you'll fight for hours with no story and sometimes you'll watch cutscene after cutscene of Kiryu saying "Nandato?!" with a few fights.
It's a slow build admittedly, but it'll grow on you

Get past the Nishiki portion and Bacchus' tutorial on Rush and it'll open up to you. The start of 0 is pretty railroaded, the only thing that tops it is Fist of the North Star's 6 chapter tutorial. Once you get Rush it lets you do minigames, run around Kamurocho, and do a couple substories so you can see what it's about. Yes, it's primarily a beat 'em up with a soap opera main story and tons of side content. It's not super deep when it comes to the combat but it's satisfying, fun, and hefty.

The Japanese versions came ages before the English release. No, they don't have English subs. The Asian release of 6 has English on it but that's the only one as far as I know.

You will inevitably start to feel bored. You will walk from pointless conversation to pointless conversation. You will read and read and read while character models stare at each other lifelessly. You will do the same unchallenging fights hundreds of times over where enemies pose no threat. You will stare at cutscenes that play out in the slowest way possible. You'll tell yourself the story has gripped you while trying to ignore how badly written it is.
You will wonder why Zig Forums and various ecelebs hyped up this series, and begin telling yourself that YOU must be wrong, not them. You'll tell yourself it's good just to feel a part of something.
That's what you're in for.
