Eh, it's 50/50. You show the models, but for example Kokiri Village looks super dated on N64. I think at this level of graphical ability, choosing a style becomes more important than anything.

The N64 had a better graphics card and a dual 32-bit processor.

It was higher spec, and if it had disks it would have had a much closer competition with Sony.

N64 was vastly more powerful than the PS1. Main advantage of the PS1 were the discs, which could hold more data, and thus you could have better textures and VA.
On the other hand, the cartridges on the N64 meant much faster loading times, which made games like Ocarina of Time possible. That would've been impossible on the PS1.

Honestly I MASSIVELY prefer the graphical style of MGS to the graphical style of OoT

N64 had bigger, clearer polygons. PS had better textures + dithering. N64 games look better on emulators without tweaks.

MGS1 still looks great to me. they realized the limitations they had and went for the deep, sunken grey eyes that have become so iconic, since they probably would have had googly eyes that looked goofy as hell. not to say that OOT looks bad in anyway, but there's no denying MGS1 was very impressive graphically for the time. i remember seeing the cutscene of the HIND D taking off when i was a kid and being blown away.

Those Rare games could look pretty damn good, I think Dk64 was one of the best looking games of the N64, love that game despite the heavy collecting duty

Snake actually had eyes in the game at one point but they were painted on. This is what they would have gone for with enough processing power.
