1) Adults who watch anime and play video games are weird and seen as immature manchildren. Yes, even in Japan.

2) The Japanese are not inventive. Their stories are mostly copy pasted with a singular gimmick, since the first popular ones of the post war involved younger people, the formula has been established and unchallenged. Many Japanese writers literally can't envision a scenario where someone who isn't school aged goes on an adventure. This is also why every decade is dominated by a few singular genres until Japanese weebs grow tired of it, like how every anime atm seems to be isekai and a few years ago it was all slice of life.

3) Japanese adults are serfs who are expected to keep their head down and work tirelessly for society. This is a cultural hangover from the era of the samurai. Only youth still have the society approved option to pick their path and be free. Additionally, the Japanese are very realistic about biology, so older woman - older than teenagers - are seen as people who should already be settled with children. Imagine if a western writer tried to make an adventure story with a near 40 year woman as the love interest. Put together, this means it's hard to write stories about older people. You can't very well pair a late 20s man with a mid-teens girl.

You see OP, Japanese have a culture that requires every young person to have their soul crushed to be ready for the life of a salaryman. Those that retain even the smallest bit of individuality work as a cashier at 7-11 or create manga/video games that feature what they want their life to be like. A huge part of that is not having their youth be wasted cramming for entrance exams for the best universities.
That's why damn near all of their works have characters below the age of 25, anybody after that age is considered to be too old to have fun and having fun above that age is worthy of scorn, and this is also the reason why weeaboos eventually hate living in Japan.
