Depends on the game but pretty much. I've got a specific character I try out for my first run of most first person rpgs like Fallout and elder scrolls. I just make a girl character and focus either punching shit or using melee.

I've never really self-inserted as my player character, when I was a kid I saw it as me helping somebody else get through the game. When they succeed it was because of me and it made me happy seeing the character happy, and if they failed I was the one to blame and it made me want to help them out even more this is probably because I played nothing but Nintendo back then, where all the characters are pre-established like Mario or Kirby, and the game manuals would explain the controls in a way that it's still them performing all the actions.
Nowadays I don't really give a shit or think about it all that much because I ultimately play video games to finish them at my own pace. If I get to create the character my process is either based on the stats or what they look/sound like. Monster Hunter's always the hardest choice because it's the one where gender determines all the armors you'll be wearing and they're 400+ hour games so if you want slut armor or big robot monsters you're going to be living with that choice for a long ass time.
