As someone who had Mario 64 as one of their first game, I don't know how so many people rank it better than Odyssey.

Odyssey outstrips it in basically every regard.

I didn't care for it. Having you go back into the same world over and over with minor changes over just grabbing all the stars in one go was pretty lame, there's no real progression other than unlocking in-world powerups and watching the star counter tick up, bossfights were underwhelming.

Yeah, that and the renewed interest of modding thanks to the PC port.

The PC port really made me appreciate this game, it's like crack. I can't go back to choppy 30fps on Project64. New levels when?

No shit it was the first 3D platformer, on top of that the N64 controller was the first to successfully introduce the analog stick. SM64 could perfectly be a disaster or way too overwhelming for the public like many other 3D platformers at the time if it wasn't for the legendary gaming design from Shiggy.
Mario's face being at the start is basically a tutorial to introduce you to the analog stick, then you have another tutorial to get used to the 3D environment, the first floor are more tutorials until you get to bower and after the first key the game really starts.
The levels aren't too long, not to challenging or too easy, you have absolute freedom of movement to get the best of those thigh af controls, SM64 controls better than a lot of recent games, definitively better than super lucky tale and yookalaylee. Music is great too. It's fucking good. Unlike Sonic which went downhill in the 2D to 3D transition, Mario pushed the medium forward. Besides DOOM I can't name more games that had impacted gaming like SM64, and no amount of buzzwords and cope will change that fact.

There were 3D platformers before Mario 64, they weren't anywhere near as good but they existed.

Sonic Adventure is a pretty bad game. It's almost good if it was just Sonic and the controls were a little tighter and the levels weren't mostly trash.
