BG3 is going to use D&D5 rules so I assume they're just going to have the different fighting styles (ie 1handed,2handed, dualwield etc), and I think some classes can select a second one later on.
I'm assuming it's made to be intentionally goofy because there's no way anyone would look at that and think "yeah, that looks good"

I have never played anything slower than Baldurs Gate. Not being turn based doesn't make it fast, and being turn based sure doesn't stop every single turn based AD&D game predating it from having faster paced combat.
