There is almost no reason to use multiply displays for gaming when widescreen monitors exist.

I do not. For the most part, multi-screen setups are a waste. 99% of people with these setups are not being "more productive". They're just ADHD retards who can't even spend 5 minutes playing a game without also having a youtube video or porn playing on the secondary screen.
If you are actually some kind of independent contractor who does actual work at his own home, then fine. But for the other 99% of people, you're just lying to yourselves.
It's getting better, but don't expect flawless experience with any game. Most single player AAA/AAA titles have native ultrawide resolutions these days. Indies and retro games often do not.

I use two monitors. Usually primary has my browser and secondary has some chat programs open, foobar, and task manager. When I'm playing a game I sometimes move my browser to take up half of the second screen.

I have 2 monitors that I use for both gaming and work. One is an ultrawide for games that support that, the other is 4k for games that don't. I normally have a browser, discord, spotify open on my non-gaming monitor when I need to reference something or there's a loading screen.
And then with work, it's nice to have slack, evernote, a couple of chrome windows, and VS Code open all at once. I can have everything in front of me that I'm working on and need to reference without switching between desktops.
I keep my old Surface Pro to shitpost and watch videos while playing vidya from my couch.

I'd rather have a monitor with 1440p if you're going with a 27 inch, so none of them. LG did release the best IPS, 1440p G-sync, 144hz monitor according to reviews though.

I just looked up 27 inch, IPS that's 1440p with Freesync/Gysnc on a local site for PC parts, but none of them are 144hz. At least not LG. Sadly, such is life in shitty Serbia.
I use one monitor for my PC, and the other is mainly for my PS3. Technically it's not a dual monitor set up, as I haven't found much use to use the other monitor (as it doesn't have more than 1 HDMI port so I couldn't use it past that either) since 1080p gives me enough screen space to not complain a good lot of the time.

IIRC it's LG 27GL850-B. I was in your exact spot about a year ago but finally decided for a cheaper alternative since almost no retailer had the LG in stock. I went with the Acer VG270UP which has freesync, 144hz, 1440p, 5ms and is an IPS. The monitor i got had no issues with backlight bleeding either so i'm actually very happy. I got it for about $400. So if you're looking for one i can recommend it.
One main monitor and two 7-inch monitors for monitoring and for references.
where did you get that from? most games have fixes, in 90% of cases, if you can play a game on widescreen you can also play it on ultrawide.
