For a non-bait non-shitpost answer, some games do harder difficulties well in that it actually changes how the game behaves and how you must react. It basically feels like you're playing a different game. For some people, that different game is better.

I think Death Stranding is a good example, but I only played it on hard. Harder difficulties make stamina and weight management matter, so you need to better prepare and make sure you aren't carrying too much, but still have what you need, and plan a better route, and spend time avoiding encounters if you can help it, and other stuff. Normal and Easy mode apparently make all that a cake walk and it takes away a lot of the conflict.
It's harder to find recent examples since most games take the easy (aka shit) way out and just turn enemies into bullet sponges, which is why someone like OP would consider it a waste of time. And I would agree for those games.
