The Demon Souls are so pissy that the game was immediately left in the dust by way superior Dark souls, Bloodborne and Sekiro, lol.

Dark Souls is popular due to the lore and atmosphere, not due to its gameplay (which fans of the series agree is serviceable at best) so in a way is more akin to something like Morrowind.
If you aren't enjoying the lore and walking through the ruins of Lordran you should drop the game.

I got to the Ornstein and Smaug boss fight and I do pitiful damage in the second phase. The game was decent in the first 15 hours or so but only gets more and more boring.

It's honestly the best Souls game but the series as a whole is probably the most overrated of all time.

Starting Pyro axe upgraded to level 10. I don't remember the stats but I remember investing into strength a lot.
I think it would take me 50 or so hits to defeat the second phase while I die in 2.

If you understood growing up playing old video games with dumb, inexplicable narratives, you'd understand why people put the label of hard on this game. It's not that hard ever. You can overlevel or underlevel, either way it's when you understand the mechanics of each boss that the game becomes something you just play without thought. Roll at the correct time when having enough stamina every time and you're fine.
