Is there a type of game that's like a crossover between more traditional action/adventure games and fighting games?
I mean something where you get to pick from a bunch of pre-set characters with unique skills/movesets but you get to play to play them through more "open" scenarios like in your more standard action/rpg/adventure game.

BlazBlue's story mode. You don't get to pick your dudes, though. Alternatively, Soul Calibur's Libra of Souls -- you make a CaC, travel the world through a map and you can pick your destinations of choice while following the story. You fight people and also get attacked by bandits occasionally.

Princess/Dragon's Crown, Odin Sphere, CAPCOM's arcade Dungeons & Dragons. They're not typical fighting games, they're side-scrolling beat 'em ups, but they have RPG stats and similar things you seem to be looking for--based on your description.
God Hand is a single character beat em up but it might be your thing

A fanmade game called Final Fight LNS Ultimate puts a bunch of beat-em-up and fighting game characters into a beat-em-up game, complete with a lot of their movesets from the games they're from. However there's nothing like character specific routes, interactions or RPG elements. I'd love to see something like this from Capcom, but unfortunately they'd get flooded by shitposters complaining putting The World Warriors in another game is taking time away from SF6 or Makoto DLC in SFV or whatever.
This game is massively underrated, but I wouldn't call it a fighting game. I guess it's kind of like a fighting game if your body parts were party members in an RPG

I can think of Konquest mode in Mortal Kombat Deception and Armageddon. Maybe not quite what you mean, but close. Alternatively, stuff like Yakuza. They have the structure of a JRPG, with battles being brawling with multiple moves and styles. And Yakuza 4 has multiple playable characters.

All those games Sound good but I'll maybe specify one additional thing. The appeal to me is not just in picking different characters but in them having each their own little story arc. Even if it's the same stages and just different cutscenes. You get a fuller picture by playing as different characters.
From the ones mentioned that I did play Odin Sphere would fit but Diablo, Dragon's Crown and Borderlands wouldn't.
