Earth comes out as a-su. The katakana in Aeris is meant to simulate a real sounding name (like Elise) based on the word Earth. The translators were just heavy handed in 'understanding that reference' and making it even more like Earth.

I think most of the words ending with 'th' ends up with ス though. So if they'd write Earth, it'd be アース. But if they use the word 'The' they use ザ.
I think the earliest use of Aerith is the japanese FF7 instruction book, but it has other weird spellings like Barett.
I also think Sephiroth is the only name no one debates over because Sephiroth has a real life likeness despite it ending with a ス.

Weird part about the US version is she is hard coded as Aerith. But even weirder her preset name when you can rename her is Aeris.
