Amiibo got really hard by the Samus Returns Controversy.
I mean AC did do a huge blowout with the Amiibo Festival fiasco but in 2017 they got back up hard with the release of BOTW. Every major release had one to three Amiibos tied to it during the year, even Hey Pikmin got an Amiibo of it's own. But then they revealed the special functions of the Samus Return Amiibo and everone went fucking wild.
Prior to that, Amiibo's functionalities only consisted on 5 things: Smash Training, Minor cosmetic like costumes, Daily bonuses, Fire Emblem characters and unlocking NES VC demos on the Amiibo Tap app. But then fucking Samus Returns decided to lock the Fusion Mode and 3 content galleries behind Amiibo and everyone lost their fucking minds. Samus Returns also sold poorly so that and the small but vocal backlash might had Nintendo want to phase out Amiibos like how they're phasing the Miis on the Switch.

Smash Ultimate is the only Post-2017 game on Switch that actively uses Amiibo (And New Horizons but they didn't even bother to reprint the cards until 7 months later). We went from FE Amiibo letting you play as the characters from unrelated games in a battle (Not only Fates and Echoes but also Codename STEAM) to unlockable BGMs in Three Houses. Yoshi Crafted World also has worse Amiibo unlocks than Wooly World and it's 3DS port. SMM2 didn't bring back the Mystery Mushroom, Link's Awakening only used 1 Zelda Amiibo in a pretty half assed way and some major games like Luigi's Mansion 3 or SMP didn't even bother.

They are using them less and less in other games that aren't in Smash. And even then they only do the bare minimum for the Smash lineup.
Also I think there isn't a single game on Switch that uses Miis outside of Smash Ultimate and 3DS/Wii U ports. Also games that would have been perfect fits for Miis like Clubhouse Games 51 or even games that already had Mii features like Super Mario Galaxy on the 3D Allstars version ethier scrapped or didn't use them.
