GOAT: castlevania 3, rondo of blood (not the shitty snes or psp ports, track down the pc engine version, someone made a specific exe that essentially loads a custom setup emulator just for the game) that 2D bloodstained game
good but definitely a step down from the above two: castlevania 3, bloodlines
flawed but has its charm: castlevania 2/4
sucks: all the gameboy games and really everything else on this list

1 and 3 are two of the best platformers ever made but don't hold your hand and filter a lot of people. has more content and looks/sounds better while 1 has better design. Rondo is also good, though not as good, but has much more manageable difficulty and some of the better boss fights in the series.
2 isn't very good, I'd say strictly for CV enthusiasts only because it's interesting in some ways but ultimately pretty bad.
4 is a good game but plays more like a normal platformer, is mostly very easy compared to the other games and kind of falls apart in the last third or so of the game, still worth playing though and a lot of people who don't like the other games like this one.
The metroidvania ones are honestly all quite good though have a completely different appeal to the classic ones. Probably SotN>Aria are the must plays, but I would strongly recommend you pay Rondo of Blood to completion first as they are direct sequels with recurring characters (though all the games are in the same continuity).

All of them. There is no such thing as a bad castlevania. They are THE action platformer series for a reason.

Absolutely wrong.
I played the redux version and while it isn't as bad as a lot of people say it's not on the the level of 1 or 3. The level design seems fairly random, the bosses basically don't exist or have no AI at all and the weapon balance is all over the place.
It's kind of like Zelda 2 where it is interesting in that it was made before the franchises' conventions were really set and so is really off the wall and experimental in some ways, but it definitely has more misses than hits.
The only good things that came out of Simon's Quest are Bloody Tears and making Simon the Belmont who killed Dracula twice
it's to be mentioned that 4 has a hard mode that begins when the game is beaten and continued on immediately
really should have been an option like Bloodlines but it's there
Dracula X is mind boggingly terrible compared to rondo.
I actually never bothered with that, what changes? Enemy damage?
I also second JP Castlevania. The US version also had some weird changes made to make it harder so you'd be inclined to buy the game, so I recommend looking for a JP-translated ROM.

Yeah 1 is still really good despite some horse shit like the hallway leading up to Death, Death himself, and fucking Dracula spawning on top of you.

yes, a lot of enemies require 1 or 2 more hits, bosses are basically 1 damage pip every time instead of some taking two but cheese stuff like multiple cross hits still register
enemies do more damage too, getting bounced by two enemies is basically all of your health
I don't know how you can think that, Rondo is way, way too easy with some downright insulting levels. Dracula X at least is constantly trying to kill you.

yes its a pretty faithful remake with some goodies thrown in even, the originals are still worth emulating though rondo even has a unofficial PC port
I've played through it a few times, and still think Simon's Quest isn't a good game. It has some iconic bits and did inspire SOTN, but that's all it really has going for it. When you know where to go, it's mind-numbingly easy. The enemies die in two or three hits, and the mansions don't have any real interesting level design.
Dracula's design IS cool though, and I'll gladly defend it. He was resurrected from decomposed body parts, of course he'd look different from a classical Dracula design.

It's a preference thing. The games are subtly different. The main thing is whether or not you like the graphics/character redesigns as the other differences won't even really be noticeable to someone not experienced with the two games.
Personally I like it and honestly think the redesign of Richter ties in better with his SotN self and also the time period, but a lot of people dislike it. Presumably the devs too because it hasn't stuck as his canon design and it now never will because of smash.
