For me it's because most maps have no ambient noise like wind, and when you do something like jump/shoot a gun there's a huge echo reverberating through the map, especially in larger maps like pic related

There's a difference between something feeling offputting or unsettling and something being actually scary. Mario 64 does have a genuinely strange atmosphere, even for its time and even in contrast to games contemporary to its time like Banjo Kazooie which lacked the same "creepiness" factor.

To me it's just sad walking through a multiplayer source map when it's empty because it reminds me of all the good games I can never have again.
Even worse when it's a map I've never played on, because then it makes me long for good times that never happened.

Not all source maps are creepy at all. Some are. There's this ambient sound file in HL2 that sounds like a man being tortured by Satan and it plays in one of HL2's Citadel levels. Some chucklefuck map authors used it in their gmod maps and I could never play them because I hated hearing that faint screaming in the background. Gm_subtransit is a great example of source engine creepyness, it's a huge soviet subway system with drivable trains and unsettling ambience. Great rp/building map but hard to play alone.
