Friends of Mineral Town (either the GBA one or the PS1/64 one, there is also a recent remake on Steam called Story of Seasons: Friends of Mineral Town but I still haven't played it).
There is also Rune Factory if you want some ARPG in your farm life, RF3 (NDS) and RF4 (3DS/Switch) are the best ones.
How quickly can I start the relationships, and how in-depth are they?
Elona is a roguelike/lite/fuck-if-I-know with romance, but you have to write it by yourself because the game is powered by your own autism.

How about trying Rune Factory too? 3 is from ds so it can be easily emulated, and as long as your pc isn't complete shit you can play 4 on citra.

You can start working on them right at the start, same with harvest moon.

Enough to keep you busy, specially rf4, it takes quite a while to level them, also you have a lot of events for every character.

RF4 also adds dating between the confession and the marriage phases.
It's a slow process since the game is more like a farm/fantasy life simulator rather than a dating simulator.
If you want a girlfriend tamagochi with real time mechanics, buy a DS and get Love Plus with the translation patch. You can even have small and meaningless conversations with your grill of choice by using the microphone.

Use any of these DS flashcards to store your roms. Apply the translation patch on your tom or find a pre-patched rom, put it on your flashcard and have fun.
You can also play it with emulation on your PC, but "real time mode" won't work if you aren't a neet (because dates and overall progression is in real time, and designed around the idea that you will carry your waifu/NDS everywhere you go). There is a "virtual time mode" if don't want her to get angry if you miss your dates and stuff like that, this mode works well for emulation.
You can also learn japanese and play Love Plus 3DS and enjoy augmented reality dates with her.
