Remember, it has to be local, too. You want bacteria from the environment you occupy. That's how you develop resistances to things like allergies. Look for a local health food store, farmer's market, or get to know a beekeeper.

Your body doesn't handle it the same way as, say, granulated sugar.

There are yeasts that have evolved specifically to grow on honey. Depending on the water content, this will happen sooner or later. 15.5% water means an 18 month shelf life, 14% water or lower means a two year to theoretically indefinite shelf life.
Theoretically indefinite because it -could- last forever if stored air tight, water tight, in constant, low temperature away from sunlight. But we all know people fuck up and you will, too.
This also only flies for honey that has not been mixed with sugar syrup, which is a problem worldwide.

Honey is glycose and fructose separated. Unlike sugar which is glucose+fructose combined (sucrose, but you break it almost instantly)

Prefer raw (unheated) honey which contains enzymes and some research shows that it does not spike your sugar as much.

But basically it is just sugar, glucose goes to your blood and fructose metabolized in your liver.

If you are insulin resistant, or you dont need to eat carbs just dont consume it. And if you do dont do it everyday.

I bike a lot and i eat some honey once or twice a week.
