The only somewhat hard to find micro in egg yolk is vitamin D, which you can also get by going outside for an hour (even with sunscreen). It's not worth the fat that comes with it. Egg yolks are better as just a binder or for flavor, while egg white is a better food for nutrition.

Why is the fat not worth it? Do you seriously avoid animal fat?

It's a macro/calories/volume thing. Most of the calories are in the yoke, most of the protein is in the white. The issue is you can't really eat egg whites alone without them being bland as hell. But there are several recipes that can use egg whites in place of whole eggs that will actually still work.

One large egg gives you 4% vitamin A, 2.2% calcium, 4.9% iron. Not very significant, especially compared to vegetables and lean meat.

Fat is 9 calories/gram. It needs special nutrients to be worth adding those extra calories. Salmon is an extremely fatty fish, but is worth it because of the types of fat in it and being much richer in B-vitamins than something like egg-yolks. Avocado is an extremely fatty fruit, but it is worth it because of the types of fat and being very rich in Vitamin C. Egg yolks are extremely fatty, and are not worth it for the nutrition.
