you can't write a program to build a B1B or a SR71, you need designers with a very, very good sense of aerodynamics and geometry. these were made with little use of old computers as powerful as your graphic calculator, and rulers.

mechanics, design, steel working isn't something a computer programmer can do. It requires a lot of other senses, and if you think you are the best with coding, and have gigaflops of compute powers in your pocket, this technology is not comparable to like, building something that exist, raping the sound barrier multiple times and so on.
So let me resume this: you have little technology everywhere, while the NASA sent men on the Moon in the 60s when the most advanced tech you had in everybody's home was a turntable and a TV set.

Early pencils were literally a stick of lead. Then they found graphite in England. It made a darker mark than lead which was nice, but it was also fragile. To combat this they wrapped it in string which you peeled away as you wrote. A while later the decided instead to stick the graphite rod in a piece of wood which was sturdier. You could definitely make a crude pencil no problem. The hardest part is the eraser which takes decently difficult chemistry, but it's not entirely necessary to the function of a pencil.

"I, Pencil" is not "wow humans can't do what the market can do" but "wow it sure does take a while to comprehend a supply chain that's been ruthlessly optimized for hundreds of years".

Quite some time ago, an old engineer told me that the knowledge on how to make good airplane aerodynamic is lost, and recently you could see how the F-35 flew (like a brick strapped with engines).
Now everything is dependent on some software that do (correct) calculations only within specific parameters, and people better hope that this won't fail, or that someone didn't make some minor change that will fuck this up and nobody would know until everything is really broken and don't know why or where the problem is.

That said, it's a good thing to keep older books, if the worst come up, there would still be a simpe way to find back this knowledge.
And if not, it'll be the hard way: back to the blackboard and writing equations to get those back, or fiddling with stuff.

I feel that there is a difference between understanding the concepts behind advanced tech and understanding how to build it. I understand how the B1 generates lift, and I understand how it defeats radar. However you could give me all the parts and materials and even with that understanding there's no way in hell I could put one together.

I have a few math books, and it really is true that many gems are lost, even in more elementary mathematics. Knowledge about curves, factoring, algorithms for roots etc. Today's mathematicians are taught the basics on nice convenient examples, but run to the computer for any problem. Using computers to handle massive equations is certainly not a bad thing in itself, we no longer need monks performing long multiplications, but it is sad that we lose so much.

Don't forget about the economy of scale introduced by all those hours of work being bought at once. You can divide those hours of work intro discrete projects to work in parallel (Increasing raw time to market). You can break projects up into components that fall within a specific worker's expertise, thus allowing pipelining of similar work. This raises throughput. Combined, you get more work/hour toward a giant goal than a single person could ever hope to achieve, ignoring Pareto principle, gross mismanagement of resources, etc.

1) Those aircraft are made by thousands of people over many years, sometimes decades. Why do you think they're so expensive ?.
2) building an aircraft like that isn't difficult, what is hard is making sure that it stays reliable and keep flying for decades.
You'll have to deal with metal fatigue, this is the most difficult part of an aircraft design, its basically 10% aerodynamic and 90% of dealing with shitty aluminum weaknesses.
