Fat stores stuff, like toxins. Fat from pastured grass-fed animals is better that the fat from factory farmed grain-fed malnurished animals. Pluss the amino-acid profile of the animal is different between the two. But keep in mind that "grain" is grass seed. "Grass-fed" animals eat the endosperm and all the fiber, minerals, and other nutrients, whereas "grain-fed" animals only eat the endosperm, which is mostly sugar.

Agreed, you should always eat meat, dairy, eggs. The claim that "eating too many eggs raises cholesterol" makes no sense at all. The cholesterol you eat in food almost completely doesn't even get disgested. Your intestines don't just "suck" food up, there are specific transport systems for most nutrients that don't move by osmosis. Cholesterol from diet does not get into blood cholesterol. Lots of meat, dairy, eggs. Fish of course, is a type of meat, should be eaten regularly. Claims on mercury in Tuna are also manufactured. You'll hear all kinds of evil against meat but when discussing the pesticides and herbicides that don't even get rinsed off the wax coated vegetables, silence.

I am recommending, and all biological scientific knowledge indicates, that you eat a varied diet provided you don't have any food intolerances. Eating heavy grains is a bad idea. However a few sandwiches made with bread a week are not a bad idea. Nuts, seeds, and legumes are not grains and should be eaten. Any scare against legumes is just "negative" info to overload you because no one will give up peanut butter if they like it and aflatoxin scare is pushed, but then when true and overwhelming data shows eating soy is bad it will be ignored because "hey peanuts are delicious and I heard that same negative press about them!" Anything organic but sold at the supermarket is 99% of the time going to be the exact same shit as the nonorganic or made with an even cheaper process and you should not pay more for it.
Milk, again, is really good for you. Scares about mucus and blood leftovers in factory farmed milk are overblown. This is of course something you need to keep in mind, if you can get from a local farmer it is better for you, or your own if your lifestyle allows it.
Farmers markets are similar to the scam of the organic label, most of the time its just people buying shit at some supermarket and then charging you a bit more, or getting it from the same farms the supermarket gets it from and charging you about the same.
