Look into cob houses. Easy to build, last centuries, fireproof, and the resources are mostly free. The only possible downside is that it pretty much inevitably looks like it came straight out of the shire.
I have the book "The Hand Sculpted House" on the topic, and it's pretty good. Easy to understand, thorough, and with recommendations on how to get some of the odder parts for cheaper.
