if you learn a bit about poetry you'll learn the science of it.
the problem with most of the GG Sings parodies was that people just went through songs one line at a time, very restrictively, and tried to find and replace keywords, so the new lyrics as a whole really didnt tell a story or have any cohesion, it was just a bunch of "what word that rhymes with the original word is coming at the end of this next line?" and consequently a lot of the parody versions ended up retaining lots of their original lines intact even though they didnt really make sense in the new song.
you need to start by brainstorming a plot or story, dont worry about rhythm or meter or rhyme, just write a bunch of ideas down, then figure out how to work those into the song's rhythm. also, don't worry about "full" rhymes where words rhyme both assonance and consonance: that heavily restricts your options. you can choose words that rhyme one or the other.
