Can't forget the impact of cattle as well. When you raze all of the riparian vegetation and destroy the banks of streams you lose your natural buffer and even though the water table is lowered and the surrounding area dries the rivers shallow up and the become almost level with the surrounding areas. As you head east and south this becomes less of an issue as the increased precipitation and longer growing period allows the vegetation to spring back more easily but from the central plains all the way west grazing cattle is the easiest way to JUST pretty much any body of water.
